Baking soda is used as a leavening/raising agent when making cakes, cookies or breads. If the recipe you are using already includes an acidic ingredient, the baking soda can be added alone to achieve the rise and fluffiness you are after.
However, if it does not, in order to create the leavening agent, you will also have to add an acidic ingredient. Examples include tartaric acid, citric acid, lemon juice, yoghurt, buttermilk, cocoa or honey.
Pssst... unsure of the difference between Baking Soda and Baking Powder? Baking Powder includes an acidic ingredients, so this does not have to be added to achieve the rising effect. Baking Soda, therefore, is more commonly included in recipes where an acidic ingredient is already present e.g. a lemon cake
