It is produced at home using cream from local dairy cows, typically Holstein-Friesian breeds, which naturally produce milk containing both A1 and A2 beta-casein proteins. In contrast, ghee traditionally referred to as 'desi' is usually derived from indigenous cow breeds found in regions like the Indian subcontinent and parts of Africa, which generally produce milk containing only the A2 beta-casein. Given these differences in origin, breed, and protein profile, ghee made in the UK from local dairy is more accurately categorized as butter ghee.
