Hijiki is a brown, wild seaweed that turns black and shrinks in size when dried, resembling dried tea leaves. Hijiki has an earthy flavour with a less pronounced briny taste than other seaweeds. After cooking, it has a pleasant crunch and chewy bite.
Hijiki is often used in salads, soups, and vegetarian dishes, or as a starter or appetizer. It can also be mixed with rice before steaming.
Before eating, dried hijiki needs to be rehydrated in either room temperature or boiling water.
