Hijiki dried seaweed is a type of edible seaweed that is often sold in its dried form and is commonly used in Japanese and Korean cooking:
Hijiki is a brown, wild seaweed that turns black and shrinks in size when dried, resembling dried tea leaves. Hijiki has an earthy flavour with a less pronounced briny taste than other seaweeds. After cooking, it has a pleasant crunch and chewy bite.
Hijiki is often used in salads, soups, and vegetarian dishes, or as a starter or appetizer. It can also be mixed with rice before steaming.
Before eating, dried hijiki needs to be rehydrated in either room temperature or boiling water.
Hijiki is rich in dietary fiber and minerals like calcium and magnesium.
