The classic way to use it is as a sauce or drizzle over cooked meats as you serve, just like you would with mint sauce on lamb; mix with a splash of oil & red wine vinegar to form a loose sauce & leave for a few hours for the herbs to rehydrate & for all the flavours to meld together. Then drizzle a spoonful over sliced steak, game or other red meats. If using this way, you must leave it for a few hours to rehydrate.

This is gorgeous mixed with mince to make burgers or kebabs. We use 2 tsp per 250g of mince to get a beautiful flavour.

We can’t describe how good this is: we literally had it 6 nights out of 7 when we finally nailed the recipe! We even drizzled it on roast veg one night & stirred some into lentils another after trying it with roast beef for the first time.

It’ll keep well once it’s made up; it’s just oil, vinegar & spices so it will last for a couple of weeks once made, though you may need to loosen it down a touch if it gets too thick.
